Black bean soup

there is an AMAZBALLS recipe for black bean soup on the Kitchen Witch's website here.  i've made it before, and i'm damn sure going to make it again.  it's amazing.  with the weather turning colder, i made it today, and just ate some.  im in hevan.  go to the Kitchen Witch's website and get the recipe.  here is how i made it almost step by step:


here the bacon is cooking down.  i also put in the onion, and added a bunch of  carrots as well, i just love the taste of cooked carrots, and add them when ever i can. 


the salsa i am adding is home made, and not "watery" enough, so i'm adding 4 more tomatoes that i pulled from my garden today


4 cans of black beans, drained and rinsed. 


i used beef stock rather than veg broth.  i think it gives it a heartier flavor.


here's the salsa.  it's very jalapeno heavy, and i added kale to the salsa.  cause. i love kale.  i love kale.  love.  loooooooove



here is everything in the pot.  doesn't look that appetizing, but once it's boiled and blended....  it's amazing



blended and yogurt added (didn't have sour cream), served with tortilla chips.  

like i said, amazeballs.

  1. Yummm! That looks wonderful! And perfect for this fall time of year. I usually think chili, but need to experiment this year. Thanks for the inspiration. :)
